Less than you'd think. Wipe along the grain with a dry or slightly damp cloth. Dry it right after. For spills, especially wine, coffee, or grease, wipe immediately. Use coasters for drinks, placemats for meals, and trivets for hot dishes. Avoid harsh cleaners, bleach, abrasive sponges, or excess water. If you want to re-oil once a year with Rubio Monocoat, it will keep the surface at its best, though it's not required. Solid oak can always be renewed. That's the line between furniture you replace and furniture you keep.
